Prepare the Fish

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until smooth and well combined.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Dip the Atlantic cod fillets into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil. Fry in batches for about 3-4 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Make the Cuban-inspired Slaw

    Combine Ingredients

    In a large bowl, combine the shredded cabbage, grated carrot, sliced red onion, and chopped cilantro.

    Dress the Slaw

    In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper. Pour over the cabbage mixture and toss to combine. Set aside to marinate for at least 15 minutes.

Prepare Chipotle Tartar Sauce

    Mix Ingredients

    In a small bowl, mix together the mayonnaise, minced chipotle peppers, chopped dill pickles, lemon juice, and salt. Stir until thoroughly combined. Chill in the refrigerator until ready to serve.

Make Pico de Gallo

    Combine Ingredients

    In a medium bowl, combine the diced tomatoes, diced red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well and let sit for about 10 minutes to allow flavors to meld.

Assemble the Tacos

    Warm Tortillas

    Lightly warm the flour tortillas in a skillet or microwave until soft and pliable.

    Build the Tacos

    Place a piece of fried fish on each tortilla. Top with a generous portion of Cuban-inspired slaw, a drizzle of chipotle tartar sauce, and a spoonful of pico de gallo.

    Serve

    Serve the tacos immediately with house-made tortilla chips and salsa on the side.
