    Prepare the Onions

    Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set them aside.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Mix well. Gradually add the cold sparkling water to the dry ingredients, whisking until you obtain a smooth batter.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it bubbles and rises to the surface, it's ready.

    Batter the Onion Rings

    Dip each onion ring into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

    Fry the Onion Rings

    Carefully place the battered onion rings into the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

    Drain and Serve

    Once fried, remove the onion rings with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
