Prepare the Dough

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.

Add Flour

Once boiling, remove from heat and quickly stir in flour until a smooth dough forms. Let cool for a few minutes.

Incorporate Eggs

Add eggs one at a time, mixing well after each addition until the dough is smooth and shiny.

Prepare for Frying

In a large, deep skillet or pot, heat vegetable oil to 375°F (190°C). Line a plate with paper towels.

Pipe the Churros

Transfer the dough to a piping bag fitted with a star tip. Pipe strips of dough (about 4-6 inches long) directly into the hot oil.

Fry

Fry churros until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Coat with Cinnamon Sugar

In a medium bowl, combine sugar and cinnamon. Roll the warm churros in the mixture to coat.

Heat Cream

In a small saucepan, heat heavy cream over medium heat until it just begins to simmer.

Remove from heat and add chocolate chips, stirring until completely melted and smooth.

Stir in vanilla extract and mix until fully combined.
