Prepare the crust

Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture is well combined and resembles wet sand.

Form and bake the crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 10 minutes, then remove and let cool while you prepare the filling.

Mix the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue mixing until combined.

Add remaining ingredients

Add sour cream, vanilla extract, and flour to the cream cheese mixture. Beat until well combined. Add the eggs one at a time, mixing on low speed after each addition until just combined.

Pour and bake the filling

Pour the filling over the cooled graham cracker crust in the springform pan. Smooth the top with a spatula. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but slightly jiggly.

Cool and chill

Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then transfer it to the refrigerator and chill for at least 4 hours or overnight.
