Preparing the Calamares

Clean and Cut the Squid

If not pre-cleaned, clean the squid by removing the head, innards, and cartilage, then rinse thoroughly under cold water. Cut the squid into 1/2 inch rings.

Mix the Breading

In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well until evenly combined.

Coat the Squid

Dredge the squid rings in the flour mixture, shaking off any excess flour.

Heat the Oil

In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 180°C (350°F).

Fry the Squid

Carefully add the coated squid rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Making the Dipping Sauce

Combine Ingredients

In a small bowl, mix together the mayonnaise, ketchup, lemon juice, hot sauce (if using), and garlic powder until smooth and well combined.

Chill

Refrigerate the dipping sauce for at least 15 minutes to let the flavors meld.
