    Prepare the Roasted Garlic Aioli

    Preheat your oven to 400°F (200°C). Wrap the garlic head in aluminum foil and roast it in the oven for 30-35 minutes until soft. Once roasted, squeeze the garlic into a bowl and mix with mayonnaise, lemon juice, salt, and black pepper. Set aside.

    Make the Burger Patties

    In a large mixing bowl, combine the brisket, filet mignon, and chuck roast. Season with salt and pepper. Form the mixture into 4 equal-sized patties.

    Cook the Burger Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium-rare, placing a slice of smoked cheddar cheese on top during the last minute of cooking.

    Assemble the Burger

    Spread roasted garlic aioli on the bottom half of each burger bun. Place the cooked burger patty on top, add a slice of pickle, and drizzle with demi-glace mustard. Top with the other half of the bun and serve.
