Prepare the Steak
Preheat your oven to 400°F (200°C). Season the filet mignon with salt and black pepper. In a small bowl, mix espresso powder and ground dried mushrooms. Rub this mixture all over the steak.

Cook the Steak
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes on each side until browned. Transfer to the oven and roast for 6-8 minutes for medium-rare.

Prepare Brussels Sprouts Hash
While the steak is roasting, heat another tablespoon of olive oil in a large pan. Add Brussels sprouts and sauté for 5-7 minutes until they are tender. Stir in dried cranberries and maple syrup, cooking for an additional 2 minutes.

Roast the Potatoes
Toss the diced potatoes with remaining olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven (alongside the steak) for about 25-30 minutes until golden and crispy.

In a small bowl, mix softened butter with chopped fresh herbs. Set aside.
