    Prepare the Grits

    In a medium pot, bring water and salt to a boil. Stir in the blue corn grits and reduce the heat to low. Cook for about 20-25 minutes, stirring occasionally until the grits are thick and creamy. Stir in butter before serving.

    Cook the Andouille Sausage

    In a large skillet, heat olive oil over medium heat. Slice the andouille sausage and add it to the skillet. Cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Shrimp

    In the same skillet, add minced garlic and cook for about 1 minute. Add the shrimp and cajun seasoning, stirring until shrimp are pink and cooked through, about 3-5 minutes. Pour in the chicken broth and let simmer for an additional 2 minutes.

    Combine and Serve

    Serve the creamy blue corn grits in bowls, topped with the cooked andouille sausage, shrimp, pickled okra, and garnished with sliced green onions.
