    Prepare the Noodles

    Cook the buckwheat noodles in a pot of boiling water according to package instructions, usually about 6-8 minutes. Drain and set aside.

    Prepare the Bok Choy

    In a large pan, heat 1 tablespoon of sesame oil over medium heat. Add the bok choy and sauté for about 3-4 minutes until wilted. Remove from the pan and set aside.

    Make the Peanut-Sesame Ginger Sauce

    In a small bowl, mix together peanut butter, soy sauce, honey, fresh ginger, minced garlic, and remaining sesame oil. Stir until smooth and well combined.

    Cook the Salmon

    In the same pan, add the salmon fillets skin-side down. Pour teriyaki sauce over the salmon. Cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Serve

    To serve, place a serving of buckwheat noodles on a plate, top with sautéed bok choy, and a seared salmon fillet. Drizzle with peanut-sesame ginger sauce and sprinkle crushed peanuts on top.
