Quesadilla Preparation

    Prepare the Vegetables

    Finely chop the bell pepper and onion.

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté the Vegetables

    Add the chopped bell pepper and onion to the skillet. Sauté for about 3-4 minutes until they are soft. Season with salt and black pepper.

    Assemble the Quesadillas

    On one side of each tortilla, sprinkle a layer of cheddar cheese and Monterey Jack cheese, then add a portion of the sautéed vegetables on top.

    Cook the Quesadillas

    Fold the tortillas in half over the filling. Place the quesadillas in the skillet and cook for 2-3 minutes on each side until the tortillas are golden brown and the cheese is melted.
