Steak Preparation

Marinate the Steak
In a small bowl, mix the olive oil, garlic powder, salt, black pepper, and chopped fresh rosemary. Rub this mixture all over the ribeye steaks. Let them marinate for at least 30 minutes at room temperature.

Grill the Steak
Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, depending on the thickness. Use a meat thermometer to check for doneness (130°F for medium-rare).

Rest the Steak
Remove the steaks from the grill and let them rest for 5-10 minutes before slicing to allow the juices to redistribute.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and thoroughly pat them dry with paper towels.

Heat the Oil
In a large, deep pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

While the fries are still hot, sprinkle salt over them to taste.
