Cooking Pasta

    Boil the Water

    In a large pot, fill it with water and add a generous amount of salt. Bring the water to a boil over high heat.

    Cook the Spaghetti

    Once the water is boiling, add the spaghetti. Cook according to the package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of the pasta cooking water. Then drain the spaghetti and set aside.

Preparing the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

    Mix the Eggs and Cheese

    In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta. Toss to combine and ensure the pasta is coated with the pancetta fat.

    Add Egg Mixture

    Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing quickly to create a creamy sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

    Season

    Season with freshly ground black pepper and salt to taste. Toss again to combine.

Serving

    Plate the Carbonara

    Serve immediately in bowls or plates, garnished with additional Parmesan cheese and chopped fresh parsley if desired.
