Prepare the Pork Shoulder
Season the pork shoulder with onion powder, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Rub the spices all over the meat.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add apple cider vinegar and barbecue sauce over the pork. Cover and cook on low for 8 hours or until the meat is tender and shreds easily with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Mix it back with the sauce in the cooker.

Make the Dough
In a mixing bowl, combine warm water, brown sugar, and yeast. Let it sit for 5 minutes until frothy. Add flour and mix until a dough forms.

Knead the Dough
Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Shape the Pretzel Bites
Preheat the oven to 425°F (220°C). Punch down the dough and divide it into small pieces. Roll each piece into a small ball. Prepare a baking soda solution by boiling 4 cups of water and adding baking soda.

Boil the Bites
Boil each pretzel bite in the baking soda solution for about 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Melt the Cheese
In a saucepan over medium heat, combine sharp cheddar cheese, cream cheese, beer, garlic powder, mustard powder, salt, and black pepper. Stir continuously until the cheese is melted and smooth.

Serve Warm
Once melted, remove from heat and serve warm alongside the pretzel bites and pulled pork.
