Prepare the Pork
In a large bowl, mix together apple cider vinegar, brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and liquid smoke to create a marinade.

Marinate the Pork
Place the pork shoulder in a large resealable bag, pour the marinade over the pork, seal the bag, and refrigerate for at least 4 hours or overnight.

Shred the Pork
Once cooked, remove the pork from the oven and let it rest for 20 minutes. Shred the pork using two forks and set aside.

Cook the Bacon
In a large skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and drain on paper towels.

Assemble the Sandwich
On a slice of sourdough bread, layer shredded pulled pork, cooked bacon, and a mix of cheddar and jack cheese. Top with another slice of bread.

Remove the grilled cheese from the skillet, slice in half, and serve immediately while hot and gooey.
