Preparation of Ingredients

    Boil Potatoes

    Wash and peel the potatoes. Cut them into quarters and place them in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until tender. Drain and let cool.

    Chop Vegetables

    While the potatoes are cooling, finely chop the celery, red onion, and pickles. Set aside.

    Prepare Eggs

    Hard-boil the eggs by placing them in a pot of water, bringing it to a boil, then reducing the heat to low and simmering for 10-12 minutes. Remove from heat, cool in cold water, peel, and chop.

Making the Dressing

    Mix Dressing Ingredients

    In a medium bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and sugar. Mix thoroughly until smooth.

    If using, finely chop the fresh dill and mix it into the dressing.

Combining the Salad

    In a large mixing bowl, add the cooled potatoes, chopped celery, red onion, pickles, and chopped hard-boiled eggs.

    Pour the dressing over the potato mixture and gently fold until everything is well coated. Be careful not to mash the potatoes.
