Cooking Pasta

    Cook the Pasta

    In a large pot of boiling salted water, add the pasta and cook according to package instructions until al dente. Drain and set aside.

Preparing Vegetables

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add the Bell Peppers and Carrots

    Add the sliced bell peppers and julienned carrots to the skillet. Sauté for 3-4 minutes until they start to soften.

    Add Zucchini and Spinach

    Add the sliced zucchini and fresh spinach to the skillet. Cook for an additional 2-3 minutes, stirring frequently until the spinach wilts.

    Add Cherry Tomatoes

    Stir in the halved cherry tomatoes and cook for another 2 minutes until heated through.

Combining Ingredients

    Mix the Pasta with Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Pour in the vegetable broth, salt, and black pepper. Toss everything together until well combined and heated through.

    Add Parmesan Cheese

    Sprinkle the grated Parmesan cheese over the pasta and toss again to combine, allowing the cheese to melt slightly.

Serving
