Method
Dough Preparation
- 1
Activate Yeast
In a small bowl, mix the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- 2
Mix Dough Ingredients
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil.
- 3
Knead the Dough
Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
- 4
Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Topping Preparation
- 5
Prepare Tomato Sauce
In a blender, puree the canned whole tomatoes until smooth. Add salt to taste.
- 6
Prepare Cheese
Slice the fresh mozzarella cheese into 1/4-inch thick slices and set aside.
Assembling and Baking
- 7
Preheat Oven
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
- 8
Shape the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Roll or stretch it into a 12-inch circle.
- 9
Add Sauce and Toppings
Transfer the dough to a pizza peel or baking sheet. Spread a thin layer of tomato sauce over the dough, leaving a small border. Arrange the mozzarella slices evenly on top, and drizzle with olive oil.
- 10
Bake the Pizza
Carefully slide the pizza onto the preheated stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly.
- 11
Add Fresh Basil
Remove the pizza from the oven and immediately top with fresh basil leaves. Let it cool for a minute before slicing.
