    Thoroughly wash the Russet potatoes under cold water to remove any dirt. Peel the skin using a vegetable peeler.

    Slice the peeled potatoes into long, thin strips, approximately 1/4 inch thick, to create even fries.

    Soak the Fries

    Place the cut fries in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps them become crispier when cooked.

Cooking

    Heat the Oil

    In a large, deep pot, heat the vegetable oil to 350°F (175°C) over medium-high heat. Use a kitchen thermometer for accuracy.

    After soaking, drain the fries and pat them dry with a clean kitchen towel to remove excess moisture.
