Tahini Sauce

Method

Falafel

  1. 1

    Soak Chickpeas

In a large bowl, cover the dried chickpeas with water and let them soak overnight.

  2. 2

    Prepare Falafel Mixture

Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, onion, garlic, cumin, coriander, salt, and baking powder. Pulse until the mixture is coarse but combined. Transfer to a bowl and stir in the flour.

  3. 3

    Form Falafel Balls

Using your hands, shape the mixture into small balls, about 1 inch in diameter. Place them on a plate.

  4. 4

    Heat Oil

In a deep skillet, heat the vegetable oil over medium-high heat until hot. You can test the temperature by dropping a small piece of the mixture into the oil; it should sizzle.

  5. 5

    Fry Falafel

Carefully add the falafel balls to the hot oil, working in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Tahini Sauce

  1. 6

    Mix Tahini Sauce

In a small bowl, whisk together the tahini, lemon juice, minced garlic, and water until smooth. Adjust the consistency with more water if necessary. Season with salt to taste.
