Soak Chickpeas
In a large bowl, cover the dried chickpeas with water and let them soak overnight.

Form Falafel Balls
Using your hands, shape the mixture into small balls, about 1 inch in diameter. Place them on a plate.

Heat Oil
In a deep skillet, heat the vegetable oil over medium-high heat until hot. You can test the temperature by dropping a small piece of the mixture into the oil; it should sizzle.

Fry Falafel
Carefully add the falafel balls to the hot oil, working in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Mix Tahini Sauce
In a small bowl, whisk together the tahini, lemon juice, minced garlic, and water until smooth. Adjust the consistency with more water if necessary. Season with salt to taste.
