Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 200°C (400°F) to ensure it's hot enough to bake the cakes evenly.
- 2
Prepare Ramekins
Grease four ramekins (about 6 oz each) with butter and dust with cocoa powder to prevent sticking. Place them on a baking tray.
Mixing the Batter
- 3
Melt Chocolate and Butter
In a heatproof bowl over simmering water (or using a microwave), melt the dark chocolate and unsalted butter together until smooth. Stir occasionally.
- 4
Combine Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, large eggs, egg yolks, vanilla extract, and salt until the mixture is thick and slightly pale.
- 5
Combine Mixtures
Pour the melted chocolate mixture into the egg mixture, and gently fold them together until well combined.
- 6
Add Flour
Sift the all-purpose flour into the combined mixture and fold until just combined. Be careful not to overmix.
Baking
- 7
Fill Ramekins
Evenly distribute the batter among the prepared ramekins, filling them about 2/3 full.
- 8
Bake
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look set.
