Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F) to ensure it's hot enough to bake the cakes evenly.

  2. 2

    Prepare Ramekins

Grease four ramekins (about 6 oz each) with butter and dust with cocoa powder to prevent sticking. Place them on a baking tray.

Mixing the Batter

  1. 3

    Melt Chocolate and Butter

In a heatproof bowl over simmering water (or using a microwave), melt the dark chocolate and unsalted butter together until smooth. Stir occasionally.

  2. 4

    Combine Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, egg yolks, vanilla extract, and salt until the mixture is thick and slightly pale.

  3. 5

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture, and gently fold them together until well combined.

  4. 6

    Add Flour

Sift the all-purpose flour into the combined mixture and fold until just combined. Be careful not to overmix.

Baking

  1. 7

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 2/3 full.

  2. 8

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look set.

Serving

  1. 9

    Let Cool Slightly

Remove the ramekins from the oven and allow them to cool for 1-2 minutes.

  2. 10

    Invert and Serve

Carefully run a knife around the edges to loosen the cakes. Invert each ramekin onto a plate to release the lava cake. Serve immediately while warm, topped with a scoop of vanilla ice cream.
