Method

Preparing the Chocolate Fondant

    Melt Chocolate and Butter

    Preheat your oven to 200°C (392°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

    Mix Sugar and Eggs

    In a separate mixing bowl, whisk together the granulated sugar and large eggs until the mixture is pale and fluffy.

    Combine Mixtures

    Pour the melted chocolate and butter mixture into the sugar and egg mixture. Add the vanilla extract and a pinch of salt. Mix gently until combined.

    Add Flour

    Sift in the all-purpose flour and fold it into the chocolate mixture until just combined. Be careful not to overmix.

    Prepare Ramekins

    Grease individual ramekins with butter and lightly dust with flour to prevent sticking. Pour the fondant batter into the prepared ramekins, filling them about ¾ full.

    Bake

    Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft.

Serving

    Serve Fondant

    Let the fondants sit for 1 minute after removing from the oven. Carefully invert each ramekin onto a dessert plate. Serve immediately with a scoop of vanilla ice cream on the side.
