Preparing the Chocolate Fondant

Melt Chocolate and Butter
Preheat your oven to 200°C (392°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar and large eggs until the mixture is pale and fluffy.

Add Flour
Sift in the all-purpose flour and fold it into the chocolate mixture until just combined. Be careful not to overmix.

Bake
Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft.
Serving

Serve Fondant
Let the fondants sit for 1 minute after removing from the oven. Carefully invert each ramekin onto a dessert plate. Serve immediately with a scoop of vanilla ice cream on the side.
