Prepare the Filling

Mix the Ingredients
In a large bowl, combine Cheddar Jack cheese, Pepper Jack cheese, roasted corn, black bean pico de gallo, and BBQ sauce. Mix well until all ingredients are evenly coated with the sauce.
Assemble the Quesadillas

Layer the Filling
Take one flour tortilla and spread about 1/4 of the filling mixture evenly over half of the tortilla. Fold the other half over to create a half-moon shape. Repeat with the remaining tortillas and filling.
Cook the Quesadillas

Heat the Pan
In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat.

Cook the Quesadillas
Place one quesadilla in the skillet. Cook for about 3-4 minutes or until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is fully melted. Remove from the skillet and keep warm. Repeat with remaining quesadillas, adding more oil or butter as needed.

Slice and Serve
Cut each quesadilla into wedges and serve warm with extra BBQ sauce on the side for dipping.
