Wine Down Wednesdays

Dice the Roma tomatoes and chop the basil. In a bowl, mix tomatoes, basil, minced garlic, olive oil, balsamic glaze, salt, and pepper. Toast the bread slices until golden brown and top with the tomato mixture.

Prepare the Bruschetta

Boil water in a large pot, add salt, and cook spaghetti according to package instructions. Drain and set aside.

Cook the Spaghetti

In a pan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef and cook until browned. Stir in crushed tomatoes, Italian seasoning, salt, and pepper. Simmer for 15-20 minutes.

Make the Sauce

Toss the cooked spaghetti with the meat sauce. Serve hot, garnished with grated Parmesan cheese.

Combine

In a bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth. Dip ladyfinger cookies in brewed espresso and layer in a dish. Spread half of the mascarpone mixture over the ladyfingers, then repeat the layers. Dust with cocoa powder and refrigerate for at least 4 hours before serving.

In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. Add olive oil, salt, and flour gradually, mixing until the dough forms. Knead on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

Make the Dough

Preheat your oven to 475°F (245°C) while the dough is rising.

Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer to a pizza stone or baking sheet. Spread tomato sauce evenly over the crust, then sprinkle with mozzarella cheese. Add pepperoni, bell peppers, and olives.

Bake in the preheated oven for 12-15 minutes until the crust is golden and the cheese is bubbly. Remove from oven and top with fresh basil leaves.

Choose from the recommended red or white wines to pair with your pizza. Serve chilled for whites and at room temperature for reds.

Carefully crack the ostrich egg open using a large knife. You may need to tap around the top to create a clean break.

Preparing the Ostrich Egg

In a large skillet, melt the butter over medium heat. Pour the contents of the ostrich egg into the skillet, being careful to keep the yolk intact.

Cooking the Egg

Sprinkle salt and black pepper evenly over the egg. Allow it to cook for about 15-20 minutes, or until the whites are set and the yolk is still runny.

Once cooked, remove from heat and sprinkle chopped chives over the top for garnish.

Serve the ostrich egg on a large platter with signature sides like toast, avocado, and a selection of mimosas.
