    Prep the Steak

    Take the ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps in even cooking.

    Season the Steak

    Generously season both sides of the steak with salt and black pepper.

    Sear the Steak

    In a heavy skillet (preferably cast iron), heat olive oil over medium-high heat until shimmering. Add the steak and sear for about 4-5 minutes on one side.

    Add Aromatics

    Flip the steak, add crushed garlic cloves and rosemary to the pan. Continue to cook for another 4-5 minutes for medium-rare, adjusting time for desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes before slicing. This helps retain the juices.

    Prep the Potatoes

    Peel the russet potatoes and cut them into quarters for even cooking.

    Boil the Potatoes

    Place the potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy, adjusting milk for desired consistency.

    Serve the mashed potatoes alongside the sliced ribeye steak.
