1. Soak Porcini Mushrooms

In a small bowl, soak the dried porcini mushrooms in warm water for about 30 minutes until they are rehydrated. Drain and chop them roughly.

2. Prepare Sun-dried Plums

Chop the sun-dried plums into smaller pieces if they are whole. This will help them blend better into the sauce.

3. Prepare Cherries

If using fresh cherries, pit and halve them. If using frozen, thaw them slightly.

4. Sauté Aromatics

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

5. Add Mushrooms

Add the chopped porcini mushrooms to the skillet and sauté for an additional 2-3 minutes until they are tender.

6. Incorporate Fruits

Stir in the sun-dried plums and cherries. Cook for about 5 minutes, allowing the fruits to soften and release their juices.

7. Add Liquids

Pour in the red wine and vegetable broth. Bring the mixture to a simmer and cook for about 15 minutes to allow the flavors to meld and the sauce to thicken.

8. Season

Add the fresh thyme, salt, and black pepper to taste. Stir well and let it simmer for an additional 5 minutes.

9. Serve

Remove from heat and serve the Sangiovese sauce warm over your favorite dish, such as pasta or grilled meats.
