Main Ingredients

Method

Preparation of Escargot

  1. 1

    Prepare the Butter Mixture

In a medium bowl, combine the unsalted butter, minced garlic, chopped parsley, Pernod, salt, and black pepper. Mix until well combined and creamy.

  2. 2

    Prepare the Escargot

If using canned escargot, rinse them under cold water. If using fresh escargot, ensure they are properly cleaned and prepared for cooking.

  3. 3

    Fill the Shells

Place the escargot in their shells or in an escargot dish. Generously spoon the butter mixture into each shell, ensuring the escargot is well coated.

Cooking

  1. 4

    Bake the Escargot

Preheat the oven to 375°F (190°C). Arrange the filled escargot shells or dish on a baking tray. Bake in the preheated oven for about 15-20 minutes, or until the butter is bubbling and the tops are slightly golden.

Serving

  1. 5

    Serve

While the escargot is baking, toast the French bread or baguette slices until golden brown. Serve the escargot hot, garnished with extra parsley if desired, alongside the toasted bread for dipping.
