    Prepare the Calamari

    In a large bowl, combine the cleaned and cut calamari rings with salt, black pepper, and paprika. Toss to coat evenly and set aside.

    Make the Batter

    In another bowl, mix the all-purpose flour, cornstarch, baking powder, and a pinch of salt. In a separate bowl, whisk together the beaten egg and cold water. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.

    Heat the Oil

    In a deep saucepan or a deep fryer, heat the vegetable oil to 180°C (350°F). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is ready.

    Fry the Calamari

    Dip the calamari rings into the batter, allowing the excess to drip off. Carefully place them into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and transfer to a paper towel-lined plate to drain excess oil.

    Serve the crispy calamari hot with the spicy aioli on the side for dipping.

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, and hot sauce until well combined.

    Adjust Seasoning

    Taste the aioli and add salt to taste. Mix again and adjust the hot sauce if you prefer it spicier.
