For the Calamari

Prepare the Calamari
Rinse the fresh calamari under cold water and pat dry with paper towels. Cut the calamari into rings about 1/2 inch thick.

Set Up Breading Station
In a shallow bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, and paprika together. In another bowl, beat the eggs until well combined.

Bread the Calamari
Dredge the calamari rings in the flour mixture, then dip them into the beaten eggs, and finally return them to the flour mixture to coat evenly.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, being sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown.

Drain and Serve
Remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot.
For the Marinara Sauce

Cook the Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté for about 1 minute until fragrant, being careful not to burn.

Add Tomatoes and Seasoning
Pour in the canned crushed tomatoes, and add dried oregano, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a gentle simmer. Let it cook for about 15 minutes, stirring occasionally.

Finish with Fresh Basil
Just before serving, stir in the fresh basil leaves and remove the sauce from heat.
