Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 190°C (375°F) and grease four ramekins with butter. Dust with cocoa powder to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring after each until the mixture is completely melted and smooth.

  3. 3

    Whisk Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolk until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly add the melted chocolate and butter mixture to the egg mixture, whisking continuously until smooth.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Gently fold until just combined, being careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

  2. 7

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool Slightly

Remove the cakes from the oven and let them cool for 1 minute before inverting onto plates.

Serving

  1. 9

    Serve with Ice Cream

Serve the warm chocolate lava cakes immediately with a scoop of vanilla ice cream on the side. Dust with powdered sugar and garnish with fresh mint leaves.
