Veggie Patty Preparation

Cook Quinoa
Rinse the quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed. Set aside to cool.

Prepare Black Beans
In a mixing bowl, mash the black beans using a fork or potato masher until mostly smooth, leaving some chunks for texture.

Combine Ingredients
In the bowl with the mashed beans, add the cooled quinoa, chopped bell pepper, onion, grated carrot, minced garlic, cumin powder, chili powder, salt, black pepper, and bread crumbs. Mix until well combined.

Form Patties
Divide the mixture into two equal portions and shape each portion into a patty. If the mixture is too wet, add more bread crumbs as needed.

Chipotle Mayo Preparation

Mix Mayo
In a small bowl, combine the mayonnaise, minced chipotle peppers, and lime juice. Stir until well blended. Set aside.

Assemble the Burger
To assemble the burger, spread a generous amount of chipotle mayo on the bottom half of each whole grain burger bun. Place a grilled veggie patty on top, followed by slices of avocado, a lettuce leaf, and tomato slices. Top with the other half of the bun.
