Marinate the Chicken
In a large bowl, combine the chicken thighs and buttermilk. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Breading
In another bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and cayenne pepper.

Bread the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off, then dredge each piece in the flour mixture until fully coated. Shake off any excess flour.

Fry the Chicken
Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the chicken in batches for about 8-10 minutes or until golden brown and cooked through. Remove and place on paper towels to drain.

In a small bowl, mix together the Sriracha sauce and honey until well combined.
Assemble the Sandwich

Assemble
Spread a layer of mayonnaise on the bottom half of a bun. Place a piece of fried chicken on top, drizzle with Sriracha honey sauce, and top with pickles, sliced tomato, onion, and cherry peppers. Place the top half of the bun on and serve.
