Method

Prepare Falafel

  1. 1

    Soak Chickpeas

Soak the canned chickpeas in water for at least 1 hour. Drain and rinse before use.

  2. 2

    Blend Ingredients

In a food processor, combine the soaked chickpeas, parsley, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse and well combined.

  3. 3

    Form Falafel Balls

Transfer the mixture to a bowl and mix in the flour. Form the mixture into small balls or patties, about 1 to 2 inches in diameter.

  4. 4

    Fry Falafel

Heat oil in a deep pan over medium heat. Carefully add the falafel balls in batches, frying until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Make the Sauce

  1. 5

    Mix Yogurt Sauce

In a small bowl, combine the plain yogurt and harissa paste. Mix well until smooth and set aside.

Assemble the Pita

  1. 6

    Prepare Pita

Warm the pita bread in a toaster or briefly on a skillet to make it pliable.

  2. 7

    Fill the Pita

Stuff each pita with chopped red kale, diced cucumber, chopped cabbage, pickled onion, and several falafel balls.

  3. 8

    Add Sauce

Drizzle the yogurt harissa sauce generously over the fillings in each pita.

  4. 9

    Serve

Serve the falafel pita immediately while warm, with extra sauce on the side if desired.
