BBQ Dry Rub Preparation

Mix the Dry Rub
In a medium bowl, combine brown sugar, paprika, salt, black pepper, chili powder, garlic powder, onion powder, and cayenne pepper. Mix well until all ingredients are fully combined. Set aside.
Tobacco Onions Preparation

Soak the Onions
Slice the onions into thin rings and place them in a bowl. Pour buttermilk over the onions and let them soak for at least 30 minutes.

Prepare the Coating
In a separate bowl, mix flour, cornstarch, salt, and black pepper. This will be used to coat the soaked onions.

Fry the Onions
Heat oil in a deep pan over medium heat. Once hot, remove the onions from the buttermilk, letting excess liquid drip off. Dredge the onions in the flour mixture and fry in batches until golden brown, about 3-4 minutes. Drain on paper towels.
Maple Bacon Bourbon Aioli Preparation

Cook the Bacon
In a skillet, cook bacon slices over medium heat until crispy. Remove from the skillet and drain on paper towels. Reserve a tablespoon of bacon fat for the aioli.

Make the Aioli
In a bowl, mix mayonnaise, maple syrup, bourbon, minced garlic, and reserved bacon fat. Stir until smooth. Crumble cooked bacon and fold it into the aioli. Refrigerate until ready to use.

Assemble the Sandwich
On the bottom half of each hamburger bun, layer shredded Wisconsin cheddar, a lettuce leaf, a slice of tomato, a cooked burger patty, a few pieces of fried tobacco onions, and a generous dollop of maple bacon bourbon aioli. Top with the other half of the bun and serve immediately.
