Rinse and Cook Quinoa
Rinse 1 cup of quinoa under cold water to remove bitterness. Combine quinoa with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Prepare the Vegetables
While the quinoa is cooking, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and set aside. Thinly slice the red onion and wash the lettuce leaves.

Prepare the Tobacco Onions
If using store-bought tobacco onions, skip this step. Otherwise, slice onions thinly and soak in buttermilk for 30 minutes, then dredge in seasoned flour and fry until crispy. Drain on paper towels.

Layer the Ingredients
In a serving bowl or plate, start by placing a layer of quinoa at the bottom. Add a generous portion of lettuce leaves on top of the quinoa, followed by the mashed avocado.

Finish with Aioli
Drizzle the garlic aioli over the assembled ingredients for extra flavor. Serve immediately.
