    Blend the Falafel Mixture

    In a food processor, combine the chopped kale, canned chickpeas, minced garlic, ground cumin, ground coriander, salt, black pepper, and flour. Pulse until a coarse mixture forms, but do not over-blend.

    Form the Falafel Balls

    Using your hands, form the mixture into small balls or patties, about 1-2 inches in diameter.

    Fry the Falafel

    In a large skillet, heat olive oil over medium heat. Once hot, add the falafel balls in batches, frying for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

    Mix the Yogurt Sauce

    In a small bowl, combine Greek yogurt, lemon juice, garlic powder, and salt. Stir until smooth and set aside.

Assembly

    Prepare the Pita

    Warm the pita bread in a skillet or oven until soft.

    Stuff each pita with a few falafel balls, top with chopped cabbage, pickled red onion, cucumber slices, and drizzle with yogurt sauce. Sprinkle harissa spice on top for extra flavor.
