Cake Preparation

Preheat Oven
Preheat the oven to 425°F (220°C).

Melt Chocolate and Butter
In a double boiler or microwave, melt the bittersweet chocolate and unsalted butter together until smooth. Stir occasionally to prevent burning.

Combine Ingredients
In a mixing bowl, whisk together the granulated sugar, large eggs, large egg yolks, and vanilla extract until well combined. Gradually add the melted chocolate mixture and mix until smooth.

Add Dry Ingredients
Sift in the all-purpose flour and salt. Gently fold the mixture until just combined, being careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
Serving

Cool and Serve
Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes. Invert each ramekin onto a plate to release the cakes.

Serve immediately with a scoop of vanilla ice cream on top or on the side.

Sprinkle chocolate shavings over the lava cakes for an elegant touch, if desired.
