Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water (1 cup) and sugar (1 tbsp). Sprinkle yeast (2 tsp) over the top and let it sit for about 5-10 minutes until bubbly.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together all-purpose flour (3 cups) and salt (1 tsp).

    Combine Ingredients

    Once the yeast is activated, pour it into the flour mixture along with olive oil (2 tbsp). Mix until a dough forms.

    Knead Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Mix Filling Ingredients

    In a large bowl, combine ricotta cheese (1 cup), shredded mozzarella cheese (1 cup), cooked and chopped spinach (1 cup), minced garlic (2 tsp), black pepper (1 tsp), and the egg (1). Mix until well combined.

Assembly

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Shape Dough

    After the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into equal portions and roll each into a circle about 6 inches in diameter.

    Place a generous scoop of the filling in the center of each dough circle. Fold the dough over to create a semi-circle and pinch the edges to seal.
