Method

Preparation of Tobacco Onions

  1. 1

    Slice the Onion

Peel and slice the onion into thin rings.

  2. 2

    Prepare the Batter

In a bowl, combine the flour, cornstarch, paprika, salt, and black pepper.

  3. 3

    Dip the Onions

Soak the onion rings in buttermilk, then dredge each ring in the flour mixture, ensuring they are well coated.

  4. 4

    Fry the Onions

Heat oil in a deep skillet over medium heat. Fry the battered onion rings in batches until golden brown, about 3-4 minutes. Drain on paper towels.

Cooking the Bacon

  1. 5

    Cook the Bacon

In a skillet over medium heat, cook the applewood bacon until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain.

Assembling the Melt

  1. 6

    Prepare the Bread

Butter one side of each slice of sourdough bread.

  2. 7

    Layer Ingredients

On the unbuttered side of two slices, layer 2 slices of Swiss cheese, 2 slices of bacon, and a generous amount of tobacco onions. Spread 2 tablespoons of chipotle mayo on the unbuttered side of the other two slices.

  3. 8

    Complete the Sandwich

Top the layered slices with the mayo side down, creating a sandwich.

Grilling the Sandwich

  1. 9

    Grill the Sandwich

Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and grill until the bread is golden brown and the cheese is melted, about 4-5 minutes per side.
