Preparation of Burger Patties

Mix Meat
In a large mixing bowl, combine the Angus Prime beef and brisket. Season with salt and black pepper.

Form Patties
Gently mix the meat until just combined. Avoid overmixing to keep the burgers tender.

Shape Patties
Divide the meat mixture into 4 equal portions and shape them into patties, slightly larger than the burger buns as they will shrink while cooking.
Cooking the Burgers

Add Cheese and Flip
Cook each patty for about 3-4 minutes on the first side until a crust forms. Flip the patties and place a slice of American cheese on top of each.

Finish Cooking
Cook for an additional 2-3 minutes, or until the cheese is melted and the patties are cooked to your desired doneness.
Burger Assembly

Prepare Veggies
While the burgers are cooking, slice the white onion and tomato.

Prepare Buns
Spread mayonnaise on the bottom half of each burger bun.

Assemble Burgers
Once the burgers are cooked, place each patty on the mayo-spread bun. Top with sliced onions, tomatoes, pickles, and a handful of shredded cabbage.

Place the top half of the bun on each burger and serve immediately.
