Waffle Batter

Prepare the Waffle Batter
In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are okay.

Marinate the Chicken
Place chicken thighs in a large bowl and cover with buttermilk. Allow to marinate in the refrigerator for at least 1 hour, preferably overnight.

Prepare the Chicken Coating
In a separate bowl, mix the flour, paprika, garlic powder, onion powder, salt, and black pepper. Remove each chicken thigh from the buttermilk, letting the excess drip off, and dredge in the flour mixture until evenly coated.

Fry the Chicken
In a large pot or deep fryer, heat oil to 350°F (175°C). Fry the chicken thighs in batches for about 8-10 minutes, or until golden brown and cooked through. Drain on paper towels.

Make the Aioli
In a bowl, combine the mayonnaise, maple syrup, bourbon, smoked paprika, minced garlic, lemon juice, and chopped bacon. Mix well and adjust seasoning to taste.
Sriracha Drizzle

Prepare the Drizzle
In a small bowl, mix together the sriracha and honey until well combined. Adjust sweetness to your preference.
Assembly

Assemble the Dish
To serve, place a Belgian waffle on a plate, top it with a piece of fried chicken, drizzle with sriracha, and add a generous dollop of smoked maple bourbon bacon aioli. Serve with maple syrup on the side.
