Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern and season with salt and pepper.

Sear the Pork Belly
In a large oven-safe pot, heat olive oil over medium-high heat. Add the pork belly, skin side down, and sear until golden brown, about 5-7 minutes. Flip and sear the other side.

Add Aromatics and Braise
Add garlic, thyme, and peppercorns to the pot. Pour in the red wine and chicken stock, ensuring the liquid covers the pork belly halfway. Bring to a simmer.

Oven Time
Cover the pot and transfer it to the preheated oven. Braise for about 2-2.5 hours, until the pork is tender.
