Add Eggs
Incorporate eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Pipe the Profiteroles
Preheat the oven to 400°F (200°C). Transfer the dough to a piping bag and pipe small mounds (about 1 inch) onto a baking sheet lined with parchment paper.

Bake
Bake for 20-25 minutes or until golden brown and puffed. Let cool completely.

Prepare White Chocolate Ganache
Heat the heavy cream in a saucepan until just simmering. Pour over chopped white chocolate and let sit for a few minutes. Stir until smooth.

Fill the Profiteroles
Using a small knife, cut a small hole in the bottom of each profiterole. Fill with vanilla gelato using a piping bag.

Serve
Drizzle with salted caramel sauce and white chocolate ganache. Top with fresh fruit.
