Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels. Fry the potatoes in batches, cooking them until golden brown and crispy, about 5-7 minutes per batch.

    Season the Fries

    Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, drizzle with truffle oil, sprinkle with salt, black pepper, and grated Parmesan cheese. Toss to coat evenly.
