    Prepare the Potatoes

    Preheat the oven to 200°C (400°F). Wash the marble potatoes thoroughly and dry them with a towel. Cut the larger ones in half, leaving the smaller ones whole.

    Roast the Potatoes

    In a large bowl, toss the marble potatoes with duck fat, salt, and black pepper until they are evenly coated. Spread the potatoes on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes or until golden brown and crispy, flipping halfway through.

    Make the Sriracha Aioli

    While the potatoes are roasting, prepare the aioli. In a mixing bowl, combine mayonnaise, Sriracha sauce, minced garlic, lemon juice, and salt. Mix well until all ingredients are combined and smooth. Adjust seasoning with additional salt if needed.

    Serve

    Once the potatoes are roasted, remove them from the oven and let them cool slightly. Serve the marble potatoes warm with the Sriracha aioli on the side for dipping.
