    Prepare the Patties

    In a large bowl, combine the ground Angus beef, salt, and black pepper. Mix gently and form into 4 patties, making a slight indentation in the center of each patty.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness. During the last minute of cooking, place a slice of aged white cheddar on each patty to melt.

    Prepare the Buns

    While the patties are cooking, toast the brioche buns on the grill or in a toaster until golden brown.

    Assemble the Burger

    Spread aioli on the bottom half of each toasted brioche bun. Place the cooked Angus burger patty on top, followed by house pickles, slices of red onion, and a handful of arugula. Top with the other half of the bun.

    Serve

    Serve the burgers immediately with your choice of sides.
