Gelato Directions

    Prepare the Base

    In a saucepan, combine the milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.

    Whisk Egg Yolks

    In a bowl, whisk together the egg yolks. Slowly pour in about 1 cup of the warm milk mixture to temper the yolks, whisking constantly.

    Combine and Cook

    Pour the egg mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

    Chill and Flavor

    Remove from heat, stir in vanilla extract, and let cool. Refrigerate until cold, then churn in an ice cream maker according to the manufacturer’s instructions.

    Make the Sugar Syrup

    In a saucepan, combine water and sugar. Bring to a boil and stir until sugar is dissolved. Let cool.

    In a blender, combine the fruit puree, cooled sugar syrup, and lemon juice. Blend until smooth.

    Chill and Freeze

    Refrigerate the mixture until cold, then churn in an ice cream maker according to the manufacturer’s instructions.

    Preheat your oven to 350°F (175°C).

    In a mixing bowl, cream together the unsalted butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.

    Add the eggs one at a time, mixing well after each addition.

    In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients.

    Fold in chocolate chips until evenly distributed.
