    Prepare the Romanesco

    Cut the romanesco into florets and blanch in boiling salted water for 3-4 minutes until tender. Drain and set aside.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove and let drain on paper towels. Reserve the bacon fat.

    Sear the Pork Chops

    In the same skillet, add olive oil and heat over medium-high. Season the pork chops with salt and pepper, then sear them for about 4-5 minutes on each side until cooked to desired doneness. Remove from the skillet and let rest.

    Make the Creamed Leeks

    In the remaining bacon fat, add sliced leeks and sauté until soft (about 5 minutes). Stir in heavy cream and goat cheese, and cook until creamy. Crumble the cooked bacon into the mixture, and season with salt and pepper.

    Plate the Dish

    On each plate, layer the creamed leeks, top with seared pork chop, and arrange the blanched romanesco. Drizzle hot lemon honey over the top before serving.
