Add Black Beans and Seasoning
Stir in the canned black beans, cumin, chili powder, salt, and lime juice. Cook for about 5-7 minutes until heated through. Mash slightly with a fork for a chunky texture.
Sweet Potato Preparation

Roast the Sweet Potatoes
Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes with olive oil, salt, and pepper in a bowl. Spread them out on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

Prepare the Scrambled Eggs
In a bowl, whisk together the eggs, milk, salt, and pepper. In a non-stick skillet, melt butter over medium heat. Pour in the egg mixture and let it sit for a few seconds before stirring gently. Cook until just set, about 3-4 minutes.

Assemble the Tacos
Warm the corn tortillas in a skillet or microwave. On each tortilla, layer the black bean mix, roasted sweet potatoes, scrambled eggs, and shredded cheddar cheese. Top with sour cream and salsa.
