Method

Black Bean Mix Preparation

  1. 1

    Cook the Black Bean Mix

In a skillet, heat olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

  2. 2

    Add Black Beans and Seasoning

Stir in the canned black beans, cumin, chili powder, salt, and lime juice. Cook for about 5-7 minutes until heated through. Mash slightly with a fork for a chunky texture.

Sweet Potato Preparation

  1. 3

    Roast the Sweet Potatoes

Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes with olive oil, salt, and pepper in a bowl. Spread them out on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

Scrambled Eggs Preparation

  1. 4

    Prepare the Scrambled Eggs

In a bowl, whisk together the eggs, milk, salt, and pepper. In a non-stick skillet, melt butter over medium heat. Pour in the egg mixture and let it sit for a few seconds before stirring gently. Cook until just set, about 3-4 minutes.

Tacos Assembly

  1. 5

    Assemble the Tacos

Warm the corn tortillas in a skillet or microwave. On each tortilla, layer the black bean mix, roasted sweet potatoes, scrambled eggs, and shredded cheddar cheese. Top with sour cream and salsa.

  2. 6

    Serve

Fold the tortillas in half and serve immediately while warm.
