Prepare the Sweet Potato and Onion
Peel and dice the sweet potato into small cubes. Finely chop the onion.

Sauté Sweet Potato and Onion
In the same skillet with the bacon drippings, add olive oil if needed. Add the diced sweet potato and chopped onion, and sauté for about 8-10 minutes, or until the sweet potato is tender.

Combine Ingredients
Pour the whisked eggs into the skillet over the sautéed sweet potato and onion. Add the crumbled bacon and cook until the eggs are set, stirring gently to scramble, or let it sit for an omelet.

Add Goat Cheese
Once the eggs are nearly cooked, crumble the goat cheese over the top and let it cook for an additional minute until slightly melted.

Prepare the Potatoes
Wash and dice the potatoes into small cubes.

Cook the Potatoes
Spread the seasoned potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes, or until golden brown and crispy, stirring halfway through.
