Cornbread

Prepare the Dry Ingredients
In a large mixing bowl, combine cornmeal, all-purpose flour, sugar, baking powder, and salt. Mix well.

Combine and Bake
Pour the wet ingredients into the dry ingredients and stir until just combined. Pour the batter into a greased 8-inch square baking dish. Bake at 400°F (200°C) for 20-25 minutes or until golden brown and a toothpick comes out clean.
Chipotle Hollandaise

Melt the Butter
In a small saucepan, melt the butter over low heat. Remove from heat and let cool slightly.

Whisk the Egg Yolks
In a heatproof bowl, whisk together the egg yolks and lemon juice until pale and frothy.

Combine and Cook
Place the bowl over a saucepan of simmering water (double boiler). Slowly drizzle in the melted butter while whisking constantly until the sauce thickens. Stir in chipotle powder and salt. Keep warm.
Poached Eggs

Prepare the Water
Fill a saucepan with water and add vinegar. Bring to a gentle simmer.

Poach the Eggs
Crack each egg into a small bowl, then gently slide it into the simmering water. Cook for about 3-4 minutes for a soft poach. Remove with a slotted spoon and set aside.

Prepare the Salad
In a bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste. Toss well.
